Jelna Wild Yeast is a premium range of wines produced by the Jelna winery (Crama Jelna) in the Transylvanian region of Romania. These wines are characterized by their spontaneous fermentation process using only indigenous (wild) yeasts from the local terroir, rather than commercial yeast strains, to achieve unique and complex flavor profiles.
